Healthy Peanut Butter Cookies

I don't know about you, but I love having healthier alternatives that I can enjoy without ruining my fitness results or eating a ton of processed ingredients that I later have to detox from. This cookie is one of my favorites to make. It's easy, fast and taste amazing!
INGREDIENTS:
- 1 cup organic peanut butter (or almond butter)
- 1 large egg
- 2 tbsp organic coconut sugar
- 1/4 cup raw & unfiltered honey ( I used Hawaiian honey, but any honey you have would work)
- 1 1/2 tsp pure vanilla extract
- 1 tsp baking soda
- 1/4 tsp Himalayan salt (or sea salt)
- 1/2 cup raw chopped pecans
- 1/2 cup dairy free dark chocolate chips ( I used Hu)
INSTRUCTIONS:
- Preheat oven to 350 degrees. Line your cookie sheet with parchment paper.
- In a bowl, mix all the ingredients except for the nuts and chocolate chips. Stir with a large spoon for 1 to 2 minutes. Then fold in the nuts and chocolate chips.
- Drop the dough in rounded tablespoons onto the parchment paper. Bake for about 10 minutes or a couple minutes longer if you're making larger cookies.
- Leave the cookies on the sheet until completely cool.
- Store in the refrigerator.
